Edinburgh Castle
Edinburgh Castle is a castle fortress which dominates the sky-line of the city of Edinburgh, Scotland, from its position atop the volcanic Castle Rock. Human habitation of the site is dated back as far as the 9th century BC, although the nature of early settlement is unclear. There has been a royal castle here since at least the reign of David I in the 12th century, and the site continued to be a royal residence until the Union of the Crowns in 1603.
St. Giles' Cathedral
A prominent feature of the Edinburgh skyline, St. Giles' Cathedral or the High Kirk of Edinburgh is a Church of Scotland place of worship decorating the midpoint of the Royal Mile with its distinctive traditional Scottish crown steeple. The church has been one of Edinburgh's religious focal points for approximately 900 years. Today it is sometimes regarded as the mother church of Presbyterianism.
National Gallery of Scotland
The National Gallery of Scotland, in Edinburgh, is the national art gallery of Scotland. An elaborate neoclassical edifice, it stands on The Mound, between the two sections of Edinburgh's Princes Street Gardens. The building, which was designed by William Henry Playfair, first opened to the public in 1859.
Craigmillar Castle
Craigmillar Castle is a ruined medieval castle in Edinburgh, Scotland. It is situated 3 miles (4.8 km) south-east of the city centre, on a low hill to the south of the modern suburb of Craigmillar. It was begun in the late 14th century by the Preston family, feudal barons of Craigmillar, and extended through the 15th and 16th centuries. In 1660 the castle was sold to Sir John Gilmour, Lord President of the Court of Session, who made further alterations. The Gilmours left Craigmillar in the 18th century, and the castle fell into ruin. It is now in the care of Historic Scotland.
Wallace Monument
The National Wallace Monument is a tower standing on the summit of Abbey Craig, a hilltop near Stirling. It commemorates Sir William Wallace, the 13th century Scottish hero.
Shepherd's pie
Here is a basic recipe for a simple ground beef Shepherd's Pie.
Ingredients:
1/2 lbs ground round beef
1 onion chopped
1-2 cups vegetables - chopped carrots, corn, peas
1/2 - 2 lbs potatoes (3 big ones)
8 tablespoons butter (1 stick)
1/2 cup beef broth
1 teaspoon Worcestershire sauce
Salt, pepper, other seasonings of choice
Method:
1 - Peel and quarter potatoes, boil in salted water until tender (about 20 minutes).
2 - While the potatoes are cooking, melt 4 Tablespoons butter (1/2 a stick) in large frying pan.
3 - Sauté onions in butter until tender over medium heat (10 mins). If you are adding vegetables, add them according to cooking time. Put any carrots in with the onions. Add corn or peas either at the end of the cooking of the onions, or after the meat has initially cooked.
4 - Add ground beef and sauté until no longer pink. Add salt and pepper. Add worcesterchire sauce. Add half a cup of beef broth and cook, uncovered, over low heat for 10 minutes, adding more beef broth as necessary to keep moist.
5 - Mash potatoes in bowl with remainder of butter, season to taste.
6 - Place beef and onions in baking dish. Distribute mashed potatoes on top. Rough up with a fork so that there are peaks that will brown nicely. You can use the fork to make some designs in the potatoes as well.
7 - Cook in 400 degree oven until bubbling and brown (about 30 minutes). Broil for last few minutes if necessary to brown.
Serves four.
Chocolate Muffins
Ingredients:
2/3 cup of baking cocoa.
2 large eggs.
2 cups of flour.
1 cup of chocolate chips.
1/2 cup of sugar.
2 teaspoons of baking soda.
1 1/3 cups of milk.
1/3 cup of vegetable oil.
1 teaspoon of vanilla.
1/2 teaspoon of salt.
Instructions:
Preheat your oven to 400°F.
Coat muffin tins with non-stick cooking spray.
In a large bowl, combine the cocoa, flour, sugar, baking soda, salt and vanilla.
Stir in half a cup of chocolate chips.
In a separate bowl, combine the eggs and milk.
Add the egg/milk mixtute to the other ingredients until moistened.
Scoop the batter evenly into the prepared pan.
Sprinkle with the remaining chocolate chips.
Bake for about twenty minutes or until a toothpick inserted in the middle comes out clean. Cool on a wire rack before removing from the pan.

Blueberry Crumble
Ingredients:
4 c. fresh blueberries
12 tbsp. sugar
Juice of 1 lemon
1/4 tsp. cinnamon
3/4 c. flour
1/3 c. butter
1/2 tsp. salt
12 tbsp. sugar
Juice of 1 lemon
1/4 tsp. cinnamon

Combine 4 cups washed and stemmed blueberries with 6 tablespoons (1/2 of total amount) sugar and juice of lemon. Put in buttered baking dish.
Combine 3/4 cup flour, 1/3 cup butter, 6 tablespoons sugar and 1/2 teaspoon salt. Work into crumbly consistency. Sprinkle over blueberries. Bake at 350 degrees for 40 minutes. Delicious over vanilla ice cream. Serve warm.
